गुळांबा | Gulamba | Sanjeev Kapoor Khazana

A classic Maharashtrian recipe of flavourful raw mango jam is a perfect accompaniment to make an ordinary meal extraordinary.

GULAMBA

Ingredients

3-4 totapuri raw mangoes
2 tbsps ghee
A pinch of salt
1 cup chopped jaggery
¼ tsp nutmeg powder
½ tsp cardamom powder

Method

1. Peel, deseed and cut the raw mangoes into 1 cm pieces.
2. Heat ghee in a pan. Add the cut mangoes, salt and sauté for 4-5 minutes.
3. Add jaggery, nutmeg powder, cardamom powder and mix well.
4. Cook on medium heat for 10-15 minutes or till the mangoes soften.
5. Transfer on a plate and allow to cool.
6. Store in air tight container and use as required.
