Gudamma Recipe | कच्चे आम का गलका बनाने की आसान विधि | खट्टी मीठी आम की चटनी | Atima's KitchenA sweet & sour side dish or chutney, which enhances the taste of our simple day-to-day meal. People call it with different names in a different part of the country, e.g., Aam ki launji (Chutney).To prepare Gudamma we need only a few ingredients.500 gram. - Raw Mango (Peeled, deseeded, and cubed) 300 gram. - Jaggery (Crushed) 1 tsp. - Panch Phoron (five spice) Masala1 tsp. - Mustard Oil1/2 tsp. - Red Chilli Powder1/2 tsp. - Turmeric Powder1/2 tsp. - Black Salt1/2 tsp. - Sea SaltIn a pan, heat oil, add Panch Phoron Masala and stir till aromatic. Add Mango pieces and mix properly. Now add remaining ingredients and mix on low heat. Cover for 2-3 minutes till mango pieces are soft and moist. Add Jaggery and add 2-3 tsp. water and mix. Keep on low heat. Cover and cook till the jaggery fully meltdown. Now open and cook for 5-7 minutes till the syrup thickens a little. Remove from heat and let it cool. The syrup will become thick after cooling. Store in a jar.
