Grilled Chicken & Walnut Sandwich | Walnut Surprise by Chef Anupa | Sanjeev Kapoor Khazana

Chicken Salad Sandwich with Apples and Walnuts.Made with feta and goat cheese, this rich and creamy dip is perfect with grilled pita bread.

GRILLED CHICKEN AND WALNUT SANDWICH

Ingredients

2 boneless chicken breasts
3-4 tbsps coarse California Walnut powder
4 croissants
1 tbsp Worcestershire sauce
1 tbsp chopped garlic
Crushed black peppercorns to taste
1 tsp red chilli flakes
Salt to taste
1 tbsp oil
½ medium red cabbage, shredded
5-6 fresh basil leaves
2-3 tbsps mayonnaise
Few iceberg lettuce leaves
Few lollo rosso lettuce leaves
5-6 cherry tomatoes

Method

1. Make incisions on both sides of each chicken breast and transfer on a plate. Add Worcestershire sauce, garlic, crushed peppercorns and chilli flakes and rub well. Add salt and rub well.
2. Heat oil in a non-stick grill pan. Place the marinated chicken breasts and cook from both sides till grill marks appear.
3. Preheat oven to 180° C.
4. Wrap each grilled chicken breasts in aluminium foil and place on a baking tray. Put the tray into the preheated oven and bake for 10 minutes. Remove from oven and unwrap.
5. Shred the chicken and transfer in a bowl.
6. Heat a non-stick pan.
7. Halve the croissant vertically and toast them on hot pan from both sides till golden brown.
8. Add red cabbage, California Walnut powder, torn basil leaves, salt, crushed peppercorns and mayonnaise to shredded chicken and mix well.
9. To prepare one sandwich, spread the chicken mixture on the toasted base of croissant and cover with remaining croissant half.
10. Place few iceberg lettuce leaves, lollo rosso leaves and cherry tomatoes on one side of a serving platter, put sandwich on the other side and serve immediately.
