Grilled Chicken Burrito | Sanjeev Kapoor Khazana

Refined flour tortillas stuffed with spicy chicken mixture, rolled over and grilled.

GRILLED CHICKEN BURRITO - (Serves - 4)

Ingredients

250 grams boneless chicken, cut into cubes
4 readymade refined flour tortillas
1 tablespoon olive oil + for greasing
2 tablespoons chopped garlic
1 medium onion, finely chopped
1 teaspoon red chilli powder
1 medium tomato, chopped
Salt to taste
Crushed black peppercorns to taste
Processed cheese as required
Tomato ketchup for serving

Method

1. Heat 1 tablespoon olive oil in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté till translucent.
2. Add chilli powder, mix and sauté for 30 seconds. Add chicken, mix and cook for 1 minute. Add tomato, mix and cook till chicken is done.
3. Add salt and crushed peppercorns, mix and cook for 1 minute. Transfer in a bowl.
4. Preheat an electric griller.
5. Place each tortilla on the worktop and grate some cheese on top. Put some cooked chicken mixture on top and wrap it.
6. Grease the griller with some olive oil. Place the prepared rolls and grill till golden from both sides.
7. Diagonally slice and serve hot with tomato ketchup.
