Grilled Chicken Biryani
INGREDIENTS:

Star Anise - 2 nos.
Mace - 1 no.
Kabab chini - 2 tsp.
Cardamom - 10 nos.
Coriander seeds - 1 tsp
Cloves - 10nos.
Cinnamon stick - 2 nos.
Black cardamom - 2 nos.
Cumin seeds - 1 tsp
Red chillies - 5 nos.
Salt - As Per Taste
Chicken - 500 gms
Yogurt - 1 cup
Brown onions - 3 ts
Green chillies - 5 nos.
Coriander leaves - 1 bunch
Mint leaves - 1 bunch
Capsicum - 1 no.
Tomato - 2 nos.
Chilli powder - 1 tsp
Turmeric powder - ½ tsp
Ginger garlic paste - 1 tsp
Water - As Required
Ghee - 1 tsp
Oil - As Required
Peppercorns - 3 tsp
Basmati rice(soaked) - 1 cup
Saffron water - 1 tsp
Lime juice - 1tsp
cucumber pieces - 1 tsp
Onions - 2 nos.
Garlic - 10 cloves
Pink rock salt - ½ tsp
Cumin seeds - 2 tsp
DIRECTIONS:
Take a blender add star anise, mace, kabab chiini, cardamom, coriander seeds, cloves, cinnamon sticks, black cardamom, cumin seeds, chillies grind into a fine powder.
Take chicken pieces in a bowl, add the masala powder, salt & some oil, mix it well.
Heat oil in a pan, add the chicken pieces fry them.
Take yogurt, add salt, brown onions, green chillies, coriander leaves, mint leaves, capsicum, tomato, chilli powder, turmeric powder, ginger garlic paste, water mix it well.
Heat water in a pan, add salt, ghee, oil, peppercorns, soaked basmati rice cook it till its 70% done.
Add the yogurt mixture to the chicken, by topping it up with boiled basmathi rice, mint leaves, brown onions, saffron water, lime juice, ghee and cook on dum using the dough for some time.

Take cucumber pieces in a bowl, add the onions, green chillies, coriander leaves, garlic, pink rock salt, yogurt mix it well. Raita is ready.
Now Grilled Chicken Biryani ready to serve with raita.
