Green Tea Vanilla Pannacotta | Sanjeev Kapoor Khazana

This silky smooth pannacotta has the flavour of green tea in each mouthful.

GREEN TEA VANILLA PANNACOTTA - (Serves - 4)

Ingredients

2 teaspoons green tea leaves
1 vanilla pod
1½ cups fresh cream
1½ teaspoons gelatin
1 cup milk
½ cup castor sugar
Fresh mint sprigs for garnishing

Method

1. Take gelatin in a bowl. Add 2 tablespoons water and set aside to bloom.
2. Heat milk in a small deep non-stick pan. Add cream and castor sugar.
3. Scrape out vanilla extract, add to pan along with vanilla pod, mix and cook for 2-3 minutes. Add green tea leaves, mix and cook till mixture thickens.
4. Strain the green tea mixture in another bowl and whisk. Add bloomed gelatin gradually and whisk well. Set aside and bring down to room temperature.
5. Fill individual shot glasses with green tea mixture and refrigerate for 2-3 hours or till set.
6. Serve garnished with mint sprigs.
