Green Masala Egg Curry | Sanjeev Kapoor Khazana

Boiled eggs cooked in spicy freshly ground green masala curry.

GREEN MASALA EGG CURRY

Ingredients

4 eggs
2 tablespoons oil
1 teaspoon cumin seeds (jeera)
1 cup boiled onion paste
¼ teaspoon turmeric powder
1 teaspoon coriander powder
Salt to taste
½ teaspoon garam masala powder
Green masala
1 medium bunch fresh coriander
1 medium bunch fresh mint
1 inch ginger, roughly chopped
4-5 garlic cloves
2 green chillies
Juice of 1 lemon

Method

1. Boil eggs, cool and peel.
2. To make green masala, blend together coriander leaves, mint leaves, ginger, garlic, green chillies and lemon juice with some water into a fine mixture.
3. Heat 1 tablespoon oil in a non-stick pan. Add cumin seeds and sauté well. Add onion paste, stir and sauté for 2-3 minutes.
4. Add turmeric powder and coriander powder, mix and cook for a minute. Add the green masala and mix well. Add salt and ½ cup water, stir and simmer for a minute.
5. Halve eggs and add, stir lightly. Add garam masala powder, mix and simmer for a minute.
6. Serve hot.
