Boiled eggs cooked in spicy freshly ground green masala curry.GREEN MASALA EGG CURRYIngredients4 eggs2 tablespoons oil1 teaspoon cumin seeds (jeera)1 cup boiled onion paste¼ teaspoon turmeric powder1 teaspoon coriander powderSalt to taste½ teaspoon garam masala powder Green masala 1 medium bunch fresh coriander1 medium bunch fresh mint1 inch ginger, roughly chopped4-5 garlic cloves2 green chilliesJuice of 1 lemon Method1. Boil eggs, cool and peel. 2. To make green masala, blend together coriander leaves, mint leaves, ginger, garlic, green chillies and lemon juice with some water into a fine mixture. 3. Heat 1 tablespoon oil in a non-stick pan. Add cumin seeds and sauté well. Add onion paste, stir and sauté for 2-3 minutes. 4. Add turmeric powder and coriander powder, mix and cook for a minute. Add the green masala and mix well. Add salt and ½ cup water, stir and simmer for a minute. 5. Halve eggs and add, stir lightly. Add garam masala powder, mix and simmer for a minute. 6. Serve hot.
