GREEN GARLIC CHICKEN TIKKAIngredients1 small bunch of green garlic400 grams chicken leg boneless, cut into 1 inch pieces½ cup fresh coriander leaves¼ cup fresh mint leavesSalt to taste½ lemon¾ cup hung yogurt1½ tbsps ginger paste½ tsp turmeric powder½ tsp garam masala powder½ tsp dried fenugreek leaves (kasuri methi) powder¼ tsp white pepper powder½ tsp cumin powder1 tbsp oil2 tsps butter + for bastingGreen chutney to serveOnion slices to serveLemon wedges to serveMethod1. Finely chop the green garlic and transfer in a mortar, add coriander leaves, mint leaves , salt and squeeze the juice of lemon and coarsely pound the mixture with a pestle.2. Take chicken in a large bowl, add yogurt, salt, ginger paste, turmeric powder, garam masala powder, dried fenugreek leaves powder, white pepper powder and cumin powder and the coarsely pound mixture and mix well. Set aside to marinate for 2-3 hours.3. To make the tikka, thread a few chicken pieces on soaked satay sticks.4. Heat oil and butter in a non-stick grill pan. Place the satay stick and cook on high heat for 3-4 minutes and continue till chicken is done on all sides. Baste with butter.5.
