Green Chicken Tikka | Sanjeev Kapoor Khazana

A boneless chicken tikka marinated with fenugreek, spinach puree and spices, grilled to perfection served with onion rings and tomato.

GREEN CHICKEN TIKKA

Ingredients

¼ cup fresh fenugreek leaves
¼ cup fresh shredded spinach leaves
¼ cup fresh coriander leaves
¼ cup fresh mint leaves
250 grams boneless chicken legs, cut into 1½ inch pieces
Salt to taste
1 tablespoon lemon juice
1 teaspoon red chilli powder
2 tablespoons butter
5-6 garlic cloves
1 inch ginger
1-2 green chillies, roughly chopped
1 teaspoon coriander powder
½ teaspoon cumin powder
1 teaspoon garam masala powder
2-3 tablespoons yogurt
Oil for greasing and basting
4-6 cherry tomatoes, halved
Cucumber triangles as required
Small onion roundels as required
Green chutney for drizzling

Method

1. Take chicken in a bowl. Add salt, lemon juice, chilli powder and butter and mix well. Set aside for 10-15 minutes.
2. Preheat an electric griller.
3. Grind together garlic cloves, ginger and green chillies to make a paste. Add fenugreek leaves, spinach leaves, coriander leaves and mint leaves and grind again alongwith some water to make a smooth paste.
4. Add green chutney, coriander powder, cumin powder, garam masala powder and yogurt to marinated chicken and mix well.
5. Grease the preheated griller with some oil, place the marinated chicken pieces and grill till golden and cook from both sides, basting with some oil.
6. Skewer one halved cherry tomato, one cucumber triangle, one onion roundel and one grilled chicken piece in each toothpick and place on a serving platter.
7. Drizzle some green chutney on top and serve hot.
