A boneless chicken tikka marinated with fenugreek, spinach puree and spices, grilled to perfection served with onion rings and tomato.GREEN CHICKEN TIKKAIngredients¼ cup fresh fenugreek leaves¼ cup fresh shredded spinach leaves¼ cup fresh coriander leaves¼ cup fresh mint leaves250 grams boneless chicken legs, cut into 1½ inch piecesSalt to taste1 tablespoon lemon juice1 teaspoon red chilli powder2 tablespoons butter5-6 garlic cloves1 inch ginger1-2 green chillies, roughly chopped1 teaspoon coriander powder½ teaspoon cumin powder1 teaspoon garam masala powder2-3 tablespoons yogurtOil for greasing and basting4-6 cherry tomatoes, halvedCucumber triangles as requiredSmall onion roundels as requiredGreen chutney for drizzlingMethod1. Take chicken in a bowl. Add salt, lemon juice, chilli powder and butter and mix well. Set aside for 10-15 minutes.2. Preheat an electric griller.3. Grind together garlic cloves, ginger and green chillies to make a paste. Add fenugreek leaves, spinach leaves, coriander leaves and mint leaves and grind again alongwith some water to make a smooth paste.4. Add green chutney, coriander powder, cumin powder, garam masala powder and yogurt to marinated chicken and mix well. 5. Grease the preheated griller with some oil, place the marinated chicken pieces and grill till golden and cook from both sides, basting with some oil.6. Skewer one halved cherry tomato, one cucumber triangle, one onion roundel and one grilled chicken piece in each toothpick and place on a serving platter. 7.
