Green apple and pumpkin soup is an unique and innovative dish that is sumptuous in every aspect. GREEN APPLE AND PUMPKIN SOUPIngredients 1 medium green Washington Apple500 gms red pumpkin, peeled and thinly sliced 5-6 garlic cloves 1 medium onion, sliced 1-2 fresh thyme sprigs1 tbsp olive oil + for drizzlingSalt to taste 2½ cups vegetable stock 1 tbsp pumpkin seeds + for garnishingToasted multigrain bread slices for servingMethod1. Preheat oven to 180°C.2. Put pumpkin on a baking tray. Add garlic cloves, onion, thyme leaves, 1 tbsp olive oil and salt. 3. Put the tray into the preheated oven and roast for 15-20 minutes. 4. Heat vegetable stock in a deep non-stick pan. Add 1 tbsp pumpkin seeds and salt, cover and bring the mixture to boil. 5. Deseed and finely chop Washington Apple, add to boiling stock, cover and cook for 2-3 minutes. 6. Add roasted pumpkin mixture, cover and cook till for 1-2 minutes. Switch off heat and blend the soup mixture using an electric hand blender. 7. Pour the soup in individual serving bowls, drizzle some olive oil, garnish with some pumpkin seeds and serve hot with toasted multigrain bread slices.
