Makes about 50-55 cookies
While Koulourakia can be prepared all year round, the tradition of baking them at home for Easter is very special to me, because its inextricably linked with wonderful, childhood memories.
I grew up watching my Great Grandma, Grandma and Mom preparing them on Holy Thursday while we were fasting. I always helped them shape the cookies and play with the dough. As they were being baked, their superb scent always represented the promise of Easter approaching!
Now every time I make them at home with my own kids, their unique smells transport me back to the past, filled with precious memories of bygone, innocent times. Hopefully, I create similar precious memories for my kids as well.
Today, I will show you how to prepare these special ones with good butter, vanilla and Ouzo, opa!
Suitable for lacto-ovo vegetarians.

INGREDIENTS:
5.2 cups / 650 gr / 1 lb 7 oz Self-raising Flour, sifted
A bit extra flour for flouring the surface to roll the cookies
1.1 cups / 250 gr / 9 oz Caster Sugar
2/3 cup / 150 gr / 5.5 oz Butter, good quality, very soft
2 medium Eggs @ room temp.
cup / 125 ml Fresh Milk, lukewarm
1 tbsp. Vanilla Essence, good quality
shot / 25 ml Ouzo
tbsp. Baking Powder
tsp. Baking Soda
For glazing: 1 medium Egg Yolk + 1 tbsp. Milk
