INGREDIENTS
1. Gongura - 4-5 Bunches
2. Dried Chillies - 10-15
3. Black Gram - 2 Tablespoons
4. Cumin Seeds - 1 Teaspoon
5. Fenugreek Seeds - 1/2 Teaspoon
6. Coriander Seeds - 2 Teaspoons
7. Garlic Cloves - 15
8. Salt - 2 Teaspoons
9. Tamarind - 20-30 Grams

Wash gongura and dry it.
IT will take 2-3 days for gongura to dry completely.
Dry the gongura in the shade only.
Dry it till the gongura becomes crispy.
Gongura could be dried in the oven also.
Place the gongura in a microwave safe bowl
Microwave for 1 minute on high power.
Stir and microwave for 1 more minute
Repeat the process 3-4 times
Heat 1 teaspoon oil in pan
Add 2 tablespoons black gram and fry
Add 1/2 teaspoon fenugreek seeds, 2 teaspoons coriander seeds and fry
Add 1 teaspoon cumin seeds and fry
Add dried chillies
As dried chillies start to change colour, add garlic cloves.
Add tamarind and cut off the stove.
Move the mixture into a plate and let it cool down
Heat 1 teaspoon oil
Fry dried gongura for 3-4 minutes on low flame
Cut off the stove
Add the fried mixture and gongura to a mixie jar
Add 2 teaspoons salt or salt to taste and powder the mixture.
Serve with rice and ghee, idly or dosa
