Gongura Pachadi in Telugu | Gongura Chutney Recipe

INGREDIENTS
1. Red Sorrel Leaves - 2 Cups
2. Dried Chillies - 10-12
3. Cumin Seeds - 1 1/2 Teaspoon
4. Coriander Seeds - 2 Tablespoons
5. Sesame Seeds - 2 Tablespoons
6. Fenugreek Seeds - 1/2 Teaspoon
7. Garlic Cloves - 10
8. Salt - 1 1/2 Teaspoon
9. Tempering Seeds

Heat 1 teaspoon oil in pan.
Add 1/2 teaspoon fenugreek seeds, 1 1/2 teaspoon cumin seeds and fry
Add 2 tablespoons coriander seeds.
As they start to change colour add 2 tablespoons sesame seeds.
Add dried chillies. Since the sorrel leaves are sour, we will need more dried chillies
Move it into a different plate after dried chillies start to change colour
Heat 1 teaspoon oil in the same pan
Add washed sorrel leaves and fry on low flame till the water seeping out of the leaves boils away
It will take around 10 minutes for the leaves to cook completely
Turn off the stove
To a mixie jar, add fried dried chillies & seeds mixture, garlic cloves, salt to taste and powder the mixture coarsely
Add fried sorrel leaves and grind it into a fine paste
Move it into a different bowl
Prepare tempering now
Heat 2 tablespoons oil in pan
Add 1/2 teaspoon mustard seeds, 1/2 teaspoon cumin seeds, 1/2 teaspoon bengal gram and fry
As they start to change colour, add dried chillies.
Add curry leaves, 1/2 teaspoon turmeric powder and mix
Cut off the stove
Mix this tempering with the prepared paste
Chutney is ready
To make it tastier, add chopped onions and mix
Serve after 1 hour for the onions to set
