A very popular recipe from Andhra Pradesh where chicken is cooked along with sorrel leaves, onions, tomatoes and a blend of spices and herbs. Pair it with rice or chapattis and enjoy!

GONGURA CHICKEN

Ingredients

750 grams chicken, cut into 2 inch pieces on the bone
½ medium bunch of sorrel (gongura), leaves separated
3-4 tbsps oil
2 large onions, sliced
Salt to taste
2 tbsps ginger-garlic paste
4 dried red chillies, stemmed
1 medium tomato, chopped
1 tsp red chilli powder
½ tsp cumin powder
1 tsp coriander powder
½ tsp garam masala powder
¼ tsp turmeric powder
2 green chillies, slit
2 tbsps chopped fresh coriander leaves
Steamed rice to serve

Method

1. Heat oil in earthenware pot. Add onions, salt and sauté till golden brown.
2. Add ginger-garlic paste and sauté for a minute.
3. Add dried red chillies and mix. Add tomato and cook till it turns pulpy.
4. Add chicken and sauté on high heat for 2-3 minutes. Add red chilli powder, cumin powder, coriander powder, garam masala powder, turmeric powder and mix well.
5. Add sorrel leaves, mix and cook for 2-3 minutes. Add ½ cup water and mix. Cover and cook on medium heat for 10-12 minutes.
6. Add green chillies, coriander leaves and mix well.
7. Transfer in a serving plate and serve hot with steamed rice.
