Golgappa Shots are a twist to, arguably, Indias favourite chaat. Panipuri, Golgappa, Puchkas, this dish has many names.GOLGAPPA SHOTSIngredients Golgappa puris as required1 tablespoon ghee 1 teaspoon cumin seeds (jeera)½ cup frozen green peas, boiled1 teaspoon chaat masala1 tablespoon green chutney1 tablespoon chopped fresh coriander leavesIce cubes as required1½ cups orange juice1 tablespoon date-tamarind chutney1 teaspoon pani-puri masalaMethod1. Heat ghee in a non-stick pan. Add cumin seeds and when it changes colour, add green peas, mix and cook for 1 minute.2. Add chaat masala, 1 tablespoon green chutney and coriander leaves and mix well. Transfer in a bowl and cool. 3. Put few ice cubes, orange juice, remaining green chutney, date-tamarind chutney, pani-puri masala in a shaker, cover and shake well.4. Pour some orange juice mixture in individual shot glasses filling ¾ of it. 5. Crack the top of each golgappa puri to make a cavity, stuff it with some green pea mixture and place each puri on top of prepared shot glasses.6. Serve immediately.
