Golgappa Shots are a twist to, arguably, Indias favourite chaat. Panipuri, Golgappa, Puchkas, this dish has many names.

GOLGAPPA SHOTS

Ingredients

Golgappa puris as required
1 tablespoon ghee
1 teaspoon cumin seeds (jeera)
½ cup frozen green peas, boiled
1 teaspoon chaat masala
1 tablespoon green chutney
1 tablespoon chopped fresh coriander leaves
Ice cubes as required
1½ cups orange juice
1 tablespoon date-tamarind chutney
1 teaspoon pani-puri masala

Method

1. Heat ghee in a non-stick pan. Add cumin seeds and when it changes colour, add green peas, mix and cook for 1 minute.
2. Add chaat masala, 1 tablespoon green chutney and coriander leaves and mix well. Transfer in a bowl and cool.
3. Put few ice cubes, orange juice, remaining green chutney, date-tamarind chutney, pani-puri masala in a shaker, cover and shake well.
4. Pour some orange juice mixture in individual shot glasses filling ¾ of it.
5. Crack the top of each golgappa puri to make a cavity, stuff it with some green pea mixture and place each puri on top of prepared shot glasses.
6. Serve immediately.
