Gold Biryani

Ingredients for Chicken Piece:
Chicken pieces 4
Yogurt 1 cup
Lemon juice 2-3 tbsp
Paprika powder 2 tbsp
Salt 1 tsp / to taste
Garam masala powder 1 tbsp
Black pepper powder 1 tsp
Ginger garlic paste 1 tbsp
Red chili powder 1 tbsp
Oil 2-3 tbsp

Ingredients for Chicken Seekh Kabab:
Chicken mince 1 kg
Onion (grated & squeezed) 1 cup
Ginger garlic paste 1 tbsp
Green chilies (Chopped) 2-3
Green Coriander 2 tbsp
Red chili powder 1 tbsp
Cumin powder 1 tbsp
Salt 1 tsp / to taste
Turmeric powder 1/2 tsp
Garam masala powder 1 tbsp
Egg 1
Oil 2-3 tbsp


Ingredients for Keema Rice:
Guard Basmati Rice 2 cups
Water (for soaking) as required
Onion (Sliced) 1 cup
Oil 1/2 cup
Ginger garlic paste 1 ½ tbsp
Whole spices 1 tbsp
Tomatoes (sliced) 1/2 cup
Mutton mince (boiled) 1/2 kg
Red chili powder 1 tbsp
Cumin seeds 1 tbsp
Salt 1 tbsp
Red chili flakes 2 tsp
Coriander powder 1 tbsp
Black pepper powder 1 tsp
Garam masala powder 1 tbsp
Yogurt 1/3 cup
Water 3 cups

Ingredients for Boiled Rice:
Water as required
Salt 1 tsp
Oil 1 tbsp
Cloves 10-12
Guard Basmati Rice (soaked) 2 cups

Ingredients for Saffron Rice:
Oil 2-3 tbsp
Raisins 1/3 cup
Guard Basmati Rice (boiled) 2 cups
Saffron + milk (1 tbsp + 1/3 cup)

Ingredients for Fried Potatoes:
Potato cubes 1/2 kg
Oil 2-3 tbsp
Butter 1/4 cup
Black pepper powder 1 tbsp
Salt 1 tsp / to taste
Black pepper powder 1 tbsp

Ingredients for Assembling:
Keema rice
Boiled rice
Saffron rice
Chicken seekh kabab
Chicken pieces
Fried potatoes
Pomegranate as required
Gold paper as required
Roasted nuts as required
Boiled eggs as required

Directions for Chicken Pieces Preparation:
1. In a bowl chicken pieces, yogurt, lemon juice, paprika, salt, garam masala powder, black pepper powder, ginger garlic powder, red chili powder and coat the chicken well. Marinate for 1 hour.
2. In a pan heat oil and add marinated chicken pieces, cook each side until changes color. Pour leftover marinade and then cover and cook over medium low flame until chicken is fully done.
Directions for Chicken Seekh Kabab Preparation:
1. In a bowl add chicken mince, onion, ginger garlic paste, green chilies, green coriander, Red Chili powder, Cumin powder, salt, turmeric powder, garam masala powder, egg and mix well. your Chicken seekh kabab mixture is ready.
2. Tread it on skewers making seekh shape.
3. Heat oil in a pan and place chicken seekh kabab, cook each side until chicken is fully done.
4. Your chicken seekh kabab is ready.
Directions for Keema Rice Preparation:
1. In a pot heat oil and add onion, cook until translucent. Add whole spices, ginger garlic paste and cook for a minute.
2. Add tomatoes and cook until tomatoes are soft. Add mutton mince and cook for 4-5 minutes.
3. Add cumin seeds, red chili powder, garam masala powder, coriander powder, salt, red chili flakes and mix well.
4. Add yogurt and cook for 10 minutes. Add water and bring it to boil.
5. Add soaked rice and cook until 80% water dries out.
6. Cover and steam over low flame for 10-12 minutes. Your keema rice is ready.
Directions for Boiled Rice Preparation:
1. In a pot add water, salt, oil, cloves and bring it to boil.
2. Add soaked rice and boil until rice is 80% done.
3. Strain and set aside.
Directions for Saffron Rice Preparation:
1. In a pot heat oil and add raisins, cook for 1-2 minutes.
2. Add boiled rice and toss it well.
3. Add saffron and milk mixture and toss well until rice is evenly colored.
4. Your Saffron Rice is ready.
Directions for Fried Potatoes Preparation:
1. In a pan heat oil and add butter, cook until butter melts.
2. Add potatoes and cook for 1-2 minutes.
3. Add salt, black pepper and cook until potatoes are golden and crispy.
4. Your Fried Potatoes are ready.
Directions for Assembling:
4. In a dish add keema rice, boiled rice, saffron rice, chicken seekh kabab, chicken pieces, fried potatoes, and boiled eggs. Now garnish with pomegranate, gold paper, roasted nuts and serve.
5. Your Gold Biryani is ready.
