Gluten Free Peach Cobbler Recipe
Ingredients:
Peach filling:
4 cups frozen or fresh peaches, thaw at least 1 hour if frozen
2 Tbsp. brown sugar, packed
4 Tbsp. butter, melted
1 tsp. Fresh lemon juice
Zest from 1 lemon
1 heaping tsp. Ground cinnamon
tsp. Vanilla extract
1 Tbsp. arrowroot

Cobbler:
1 cup Bobs Red Mill 1 to 1 baking flour
1 Tbsp. baking powder
cup brown sugar, packed
tsp. Cinnamon
cup almond milk, or alternative
tsp. Salt

Directions:
Preheat oven to 375 degrees F.

While the peaches are thawing out, drain any excess liquid. Place all the ingredients for the peach filling in a bowl and stir to combine.

Pour the melted butter into an 8 x 8 baking pan and pour the peach filling on top. In another mixing bowl combine the flour, baking powder, sugar, cinnamon and salt. Stir to evenly distribute all the ingredients.

Then add the almond milk and stir until just combined. When the mixture resembles a thick pancake batter, spoon the mixture over the peaches covering the whole dish.

Place in the oven for 35 - 40 minutes or until golden brown. Let it cool for 10 minutes before cutting and serve with vanilla ice cream if you wish.
