INGREDIENTS
For the doughnuts:
6 tablespoons (72g) aquafaba, or about 1/2 the liquid from 1 can of chickpeas, drained
2 teaspoons ground flaxseed
200 grams Planet Oat Original Oatmilk
57 grams vegan butter or coconut oil, melted
364 grams bread flour
90 grams all-purpose flour
2 teaspoons cardamom
57 grams sugar
1 teaspoon kosher salt
1 1/2 teaspoons (5g) quick-rise yeast
Oil for frying (canola or vegetable oil will both work)

For the pastry cream:
500 grams Planet Oat Original Oatmilk
3 teaspoons vanilla extract (or 1 vanilla bean split and scraped)
120 grams sugar
1/2 teaspoon cinnamon
60 grams cornstarch
60 grams cold vegan margarine, cut into cubes

For the streusel:
28 grams all-purpose flour
26 grams brown sugar
12 grams rolled oats
Pinch of salt
28 grams cold vegan margarine, cut into cubes

For the glaze:
2 cups powdered sugar
1/4 cup Planet Oat Original Oatmilk
Zest and juice of 1/2 lemon (optional)
