Make a fresh and easy batch of this ginger marmalade flavoured with oranges.
GINGER MARMALADE

Ingredients

½ cup ginger, peeled and finely chopped
1½ cups sugar
1 orange

Method

1. Heat a non-stick pan, add ginger and sauté for 1-2 minutes.
2. Add sugar and 1½ cups water ,mix and cook on high till sugar melts, zest the orange directly in a pan and mix well. Halve the orange and squeeze the juice of ½ the orange and mix well. Reduce the heat to low and continue to cook till the mixture thickens.
3. Take the pan off the heat and allow the marmalade to cool.
4. Serve as required.
