This bhaji is made with sponge gourd and is an extremely popular recipe in Marathi households. The best way to savour it is with bhakris.

GILKYACHA BHARIT

Ingredients

500 grams sponge gourd (gilka), roughly chopped
Salt to taste
6 green chillies, stemmed
18-20 garlic cloves
4 tbsps oil
1½ tsps cumin seeds
6-8 light green chillies, slit
3 tbsps raw peanuts
4 tbsps chopped spring onion greens
Rice bhakri for serving

Method

1. Bring 2-3 cups water to boil in a pan. Add salt, sponge gourd and cook for 10-15 minutes.
2. Crush green chillies and garlic coarsely. Transfer the cooked sponge gourd and continue to crush.
3. For the tempering, heat oil in a pan. Add cumin seeds and once they start to change the colour, add green chillies, raw peanuts and mix well.
4. Add spring onion greens and mix well. Add the crushed mixture and mix. Adjust the salt and cook for 2 minutes.
5. Transfer in a serving plate and serve hot with rice bhakri.
