This bhaji is made with sponge gourd and is an extremely popular recipe in Marathi households. The best way to savour it is with bhakris.GILKYACHA BHARITIngredients500 grams sponge gourd (gilka), roughly choppedSalt to taste6 green chillies, stemmed18-20 garlic cloves4 tbsps oil1½ tsps cumin seeds6-8 light green chillies, slit 3 tbsps raw peanuts4 tbsps chopped spring onion greensRice bhakri for servingMethod1. Bring 2-3 cups water to boil in a pan. Add salt, sponge gourd and cook for 10-15 minutes.2. Crush green chillies and garlic coarsely. Transfer the cooked sponge gourd and continue to crush.3. For the tempering, heat oil in a pan. Add cumin seeds and once they start to change the colour, add green chillies, raw peanuts and mix well.4. Add spring onion greens and mix well. Add the crushed mixture and mix. Adjust the salt and cook for 2 minutes.5.
