GIL-E-FIRDOUSA delicious mix of bottle gourd and milk which is delicately sweetened and cooked to a beautiful and luscious consistency.Ingredients150 grams bottle gourd¼ cup short grain rice1½ tbsps ghee 2½ cups milk 10-12 almonds ½ cup sugar½ cup grated mawa/khoya¼ tsp green cardamom powder1 tbsp rose waterDried crushed rose petals for garnishMethod1. Wash and soak rice with sufficient water for 20-25 minutes. Drain, put into a blender jar and blend to a coarse paste.2. Peel and grate bottle gourd. 3. Heat ghee in a non-stick deep pan, add grated bottle gourd and sauté for 3-4 minutes. Add blended paste, mix and sauté for a few seconds.4. Add milk, mix and cook on low heat for 15 minutes. 5. Meanwhile, chop almonds and cashew nuts. Set aside until use.6. Add sugar and khoya in the pan, mix well and cook for 2-3 minutes. Add green cardamom powder, reserve 1 tbsp chopped nuts for garnish and add the remaining in the pan, and add rose water. Mix and cook further for 1-2 minutes.7. Take the pan off the heat and transfer into serving bowl, gently tap to even out the top, garnish with reserved chopped nuts, dried rose petals, and refrigerate for 2-3 hours.8.
