Here's the easiest recipe for you to try at home!GHEVARIngredients½ cup ghee + for deep frying5-6 ice cubes2½ cups refined flour (maida) 1 tbsp gram flour (besan)2 tbsps lemon juiceReady-made sugar syrup as requiredReady-made rabdi as requiredSlivered almonds for garnishBlanched and slivered pistachios for garnishDried rose petals for garnishSilver varq for garnishMethod1. Take ghee in a large bowl, add ice cubes and mix with your palms till the ice melts. Add refined flour, gram flour and 4½ cups water little by little, mixing after every addition till a smooth and thin batter is formed. 2. Add lemon juice and mix well.3. Heat sufficient ghee in a small deep pan, place a small ring mould in the centre, drop batter in a thin stream in the centre, fry for a few seconds and start dropping the batter again in the same way. Using a skewer, make a hole in the centre and repeat the same process for 10-12 more times, making a hole in the centre after every addition.4. Occasionally add hot ghee on top of the ghevar from the other pan. Drain on a cooling rack.5. To serve, drizzle sugar syrup on ghevar, pour rabdi, garnish with almonds, pistachios, dried rose petals and silver varq.
