Ghee Rice | Sanjeev Kapoor Khazana

This south Indian ghee rice recipe preparation is simple yet irresistible. This aromatic mildly spiced rice is done by steaming ghee sautéed with rice grains, nuts and spices.

GHEE RICE - (Serves - 4)

Ingredients

1½ cups basmati rice, soaked
2½ tablespoons ghee
2 bay leaves
3 green cardamoms
1 inch cinnamon
1 star anise
4-5 cloves
1 teaspoon fennel seeds (saunf)
1 inch ginger, grated
6-8 raisins
8-10 cashewnuts
1 large onion, sliced
1 sprig curry leaves
Salt to taste
Fried curry leaf sprig for garnishing

Method

1. Heat ghee in a non-stick pan. Add bay leaves, cardamoms, cinnamon, star anise, cloves, fennel seeds and ginger, mix and sauté till fragrant.
2. Add raisins, cashewnuts and onions, mix and sauté till onions turn golden brown.
3. Add curry leaves and mix. Add rice and mix well. Add 3 cups water, salt, stir to mix, cover and cook till the rice is fully done.
4. Garnish with fried curry leaf sprig and serve.
