Divine!GAJAR KI BURFIIngredients4 cups grated red carrots (gajar)¼ cup ghee3 cups full fat milk1 cup sugar½ tsp green cardamom powderA large pinch nutmeg powder1 cup grated mawa/khoya + for sprinkling2 tbsps chopped pistachios + for sprinkling2 tbsps chopped almonds + for sprinkling2 tbsps chopped cashew nuts + for sprinkling 2 tbsps chopped raisins + for sprinklingSilver warq for garnishMethod1. Heat ghee in a kadai. Add red carrots and sauté for 4-5 minutes. 2. Add milk and mix well. Cook for 10-15 minutes or till the carrots soften while stirring occasionally. 3. Add sugar, green cardamom powder and nutmeg powder and mix well. Continue stirring and cook for 3-4 minutes. 4. Add mawa, pistachios, almonds, cashew nuts, and raisins and mix well. Cook till the mixture thickens while stirring continuously.5. Transfer the mixture into a greased burfi tray. Spread it evenly and level the top. Sprinkle mawa, raisins, almonds, cashew nuts, and pistachios and press lightly. Apply some silver warq on top. Keep aside to set. 6. Cut into squares, gently de-mould and arrange on a serving plate.
