Gajar Ka Halwa Alyona Kapoor Sanjeev Kapoor Khazana

Gajar ka halwa is a popular sweet dish and a winter favourite in India made from fresh grated carrots, milk, sugar, and ghee (clarified butter). It is flavored with cardamom powder.. It is commonly served as a dessert and is especially popular during festivals and special occasions. This recipe of Gajar ka Halwa is straight from the Kapoor house made by Mrs. Alyona Kapoor and Chef Sanjeev Kapoor's daughter Rachita. Do give it a try and let us know how it turned out.

GAJAR KA HALWA

Ingredients

1 kilogram red carrots, peeled and grated
2-3 tbsps ghee
4 pinches of green cardamom powder
litre milk
2 tbsps almonds
2 tbsps cashew nuts
1 cup sugar
2 tbsps grated khoya
Slivered almonds for garnish

Method

1. Heat ghee in a wide non-stick pan. Add 2 pinches of green cardamom powder and the grated carrots and mix well. Saut on medium heat for 4-5 minutes.
2. Add milk, mix, cover and cook on medium heat for 10-12 minutes while stirring in between.
3. Meanwhile, put the almonds and cashew nuts in a mixer jar and coarsely grind it.
4. Add sugar and mix well. Cook till it melts completely and the mixture thickens, cover and cook while stirring in between.
5. Add khoya and the ground nuts and mix well. Transfer the halwa in a serving bowl, garnish with slivered almonds. Serve warm.
