East Indian pride, these airy, crispy, lightly sweet fried dough is definitely going to win hearts!

FUGIAS

Ingredients

1½ cups refined flour (maida)
½ cup whole wheat flour (atta)
2 eggs
1½ tbsps melted ghee
¼ cup sugar
Salt to taste
4 tbsps coconut milk
1 tsp instant yeast
Oil for deep frying

Method

1. Sift refined flour and whole wheat flour in a bowl.
2. Break eggs in a bowl and whisk well. Add ghee, sugar, salt, coconut milk, instant yeast and mix well.
3. Add this mixture to the flour mixture. Add ¾ cup water and mix well. Cover with the lid and set aside to ferment for 4-6 hours.
4. Heat sufficient oil in a kadai. Drop small portions of the batter and deep fry till golden brown and crisp.
5. Drain on absorbent paper and serve hot.
