FRIED RICEIngredients1½ cups rice, cooked in 3 cups vegetable stock1 tablespoon oil1 inch ginger, finely chopped1 tablespoon chopped garlic1 medium carrot, peeled and cut into cubes50 grams tofu, cut into cubes2 tablespoons edamame beans2-3 tablespoons sweet corn kernelsSalt to tasteCrushed black peppercorns to taste1 tablespoon light soy sauce1-2 stalks spring onion greens, diagonally sliced1 cup mixed bell pepper cubesMethod1. Heat oil in a non-stick wok. Add ginger and garlic and sauté for 30 seconds. Add carrot and sauté for 1 minute.2. Add tofu, edamame beans and corn kernels and toss on high heat. Add rice and toss well.3. Add salt and crushed peppercorns and mix. Add soy sauce and toss. Add spring onion greens, toss well and cook for 1 minute.4. Add mixed bell pepper, toss well and cook for 1 minute.5. Serve hot.
