Fried Rice | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

This fried rice made with veggies like tofu, edamame, sweet corn and carrots is wholesome and healthy. Perfectly satisfies your carb cravings.

FRIED RICE

Ingredients

1½ cups rice, cooked in 3 cups vegetable stock
1 tablespoon oil
1 inch ginger, finely chopped
1 tablespoon chopped garlic
1 medium carrot, peeled and cut into cubes
50 grams tofu, cut into cubes
2 tablespoons edamame beans
2-3 tablespoons sweet corn kernels
Salt to taste
Crushed black peppercorns to taste
1 tablespoon light soy sauce
1-2 stalks spring onion greens, diagonally sliced
1 cup mixed bell pepper cubes

Method

1. Heat oil in a non-stick wok. Add ginger and garlic and sauté for 30 seconds. Add carrot and sauté for 1 minute.
2. Add tofu, edamame beans and corn kernels and toss on high heat. Add rice and toss well.
3. Add salt and crushed peppercorns and mix. Add soy sauce and toss. Add spring onion greens, toss well and cook for 1 minute.
4. Add mixed bell pepper, toss well and cook for 1 minute.
5. Serve hot.
