FRIED PRAWN BALLS

Ingredients

2 cups prawns, peeled and deveined
¼ teaspoon salt
½ teaspoon black pepper powder
¼ cup chopped spring onion greens
Oil for deep-frying
¼ cup cornflour
½ lemon, cut into 4 wedges
Pepper salt to garnish

Method

1. Put prawns, salt, black pepper powder and spring onion
greens in a food processor and process until smooth. Transfer
the mixture into a small bowl.
2. Heat sufficient oil in a wok.
3. Add cornflour to the prawn mixture and mix well.
4. Grease a tablespoon and scoop two tablespoons of the prawn
mixture and shape into a ball. Gently lower the balls into the
hot oil and deep-fry till lightly browned. Drain on a wire rack.
Repeat this process till all the mixture is used up.
5. Place the prawns balls on a serving plate and serve hot,
garnished with lemon wedges and pepper salt.
