Fried Okra Stew

PREP TIME: 10 MINUTES
COOK TIME: 1 HOUR
SERVES: 6-8

INGREDIENTS
For beef
pound beef fillet
100g cow hide(wele) ,cut into pieces.
1 medium onion, sliced.
1 tsp oregano
5 cloves of garlic, minced.
1 tsp ground black pepper
1 tsp rosemary powder
1 tsp salt

For stew
150g okra
100ml vegetable oil
1 medium onion, sliced.
4 tbsp tomato paste
5 medium tomatoes, pured.
5 scotch bonnet pepper, blended.
2 bay leaves
200ml beef stock
1 tbsp salt

DIRECTION
Pour beef into a saucepan, add cow hide (wele), onion, oregano, garlic, black pepper, rosemary powder, salt, stir , pour 500ml of water cover and let boil over high heat for 35 minutes.
Wash and cut the okra into an inch thick and set aside.
Heat vegetable oil in a saucepan over medium heat and fry the okra for 5mins in batches.
Fetch more than half the oil out of the pan then add sliced onion, stir and let sweat for a minute then add tomato paste, stir and let it simmer for 4minutes
Add the tomato pure, stir and let simmer down for 5 minutes then add bay leaves.
Add beef stock, stir and let simmer down then add blended scotch bonnet pepper.
Add and adjust salt to your taste.
Add cooked beef and wele, stir and let simmer for 7 minutes then add fried okra, stir and let simmer on low heat for another minute.
Serve with boiled rice
