Fried Idlis with Curd Dip

Idli is a very versatile food, which can be transformed into many forms like Sambhar Idli, Fried Idli or even a Upma. But this recipe features a peak in innovativeness! Fried Idlis with Curd Dip turns leftover idlis into an exotic snack, served with a veggie-loaded curd dip.

Preparation Time: 10 minutes.
Cooking Time: 9 minutes.
Serves 6.

10 leftover idlis , cut into long strips
Oil for deep-frying

To be mixed into a curd dip
1¼ cups whisked thick curds (dahi)
½ cup grated carrot
1 tsp finely chopped green chillies
2 tbsp finely chopped capsicum
2 tbsp finely chopped onions
2 tbsp fresh cream
2 tbsp grated processed cheese
2 tbsp milk
Salt to taste

1. Heat the oil in a deep non-stick kadhai and deep-fry the idli strips, a few at a time, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
Serve immediately with curd dip.
