A little tangy, a little sweet, this chutney prepared with fresh dates goes with everything. Try it to believe!FRESH DATES CHUTNEYIngredients250 grams fresh yellow dates2 tbsps oil½ tsp mustard seeds½ tsp cumin seeds8-10 fenugreek seeds (methi dana)½ tsp onion seedsA pinch of asafoetida (hing)10-15 curry leaves2 dried red chillies brokenSalt to taste2 tsps chopped jaggery½ tsp red chilli powderMethod 1. Deseed and chop the dates. 2. Heat oil in a nonstick pan, add mustard seeds and once they splutter, add cumin seeds, fenugreek seeds, onion seeds, asafoetida, curry leaves, dried red chillies, chopped dates and salt. Sauté for 1-2 minutes.3. Add ½ cup water, cover and cook for 8-10 minutes. 4. Add jaggery, red chilli powder and ½ cup water, mash lightly and cook till the jaggery melts. Allow to cool completely.5.
