French beans tempered with mild spices.

FRENCH BEANS SABZI

Ingredients

1½ cups finely chopped French beans
1-2 tablespoons oil
1 teaspoon mustard seeds
4-5 curry leaves
A pinch of asafoetida (hing)
Salt to taste
A pinch of baking soda
1 teaspoon ginger-green chilli paste
2 teaspoons chopped fresh coriander leaves
Scraped fresh coconut for garnishing

Method

1. Heat oil in a non-stick pan. Add mustard seeds, and once they begin to splutter, add curry leaves, asafoetida and beans and mix well.
2. Add salt, mix well and cook for 3-4 minutes. Add a little water if required.
3. Add baking soda, mix well and cook for 1-2 minutes.
4. Add ginger-green chilli paste and coriander leaves, mix well and cook for 1-2 minutes. Add a little water if required.
5. Garnish with coconut and serve hot with chapattis.
