Foxtail Millet Pongal #MilletKhazana Sanjeev Kapoor Khazana

Foxtail millet pongal is an easy and healthy South Indian recipe that you must try!

FOXTAIL MILLET PONGAL

Ingredients

cup foxtail millet, soaked for 25-30 minutes and drained
2 cups milk
cup split skinless green gram (dhuli moong dal), soaked for 25-30 minutes and drained
cup chopped jaggery
tsp green cardamom powder
2 tbsps ghee
6-8 cashew nuts, halved
2 tbsps raisins

Method

1. Heat a nonstick pan. Add milk, cup water and allow to boil.
2. Add foxtail millet, split green gram and cook for 10-15 minutes.
3. Add jaggery, green cardamom powder and cook till jaggery melts.
4. Heat ghee in a small nonstick pan. Add cashew nuts and saut till light golden brown.
5. Add raisins and saut for a minute more.
6. Reserve some for garnish and add rest to cooked rice mixture. Cook for 2-3 minutes.
7. Transfer in a serving bowl, garnish with fried cashew nuts and raisins and serve hot.
