This easy-to-prepare Footlong Sandwich with a yummy cottage cheese stuffing is topped with cheese and baked to perfection. The perfect snack for everyone!

FOOTLONG SANDWICH

Ingredients

2 foot long breads
100 grams cottage cheese (paneer)
½ cup boiled sweet corn kernels
1 medium tomato, chopped
1 medium onion, chopped
½ cup chopped mixed capsicums
1 green chilli, chopped
½ tsp garlic powder
2 tbsps chopped fresh coriander
Crushed black peppercorns to taste
Salt to taste
2 tbsps red chilli-garlic chutney + to apply
2 tbsps schezwan chutney + to apply
1½ tbsps green chutney + to apply
Butter as required
Mayonnaise as required
1 cup grated processed cheese
1 cup grated mozzarella cheese
Red chilli flakes to sprinkle
Dried mixed herbs to sprinkle
Potato chips for serving

Method

1. Preheat the oven at 180ºC.
2. Take cottage cheese in a bowl. Add sweet corn kernels, tomatoes, onions, capsicums, green chlli, garlic powder, coriander, crushed black peppercorns, salt, red chilli garlic chutney, schezwan chutney and green chutney and mix well.
3. Cut the middle portion of the foot long bread to make a cavity and apply butter on inner sides.
4. Apply mayonnaise, schezwan chutney, red chilli garlic chutney and green chutney evenly.
5. Stuff with the prepared mixture. Sprinkle processed cheese and mozzarella cheese on top.
6. Sprinkle red chilli flakes, dried mixed herbs and crushed black peppercorns on top.
7. Bake for 8-10 minutes.
8. Cut into 4 pieces and serve hot with potato chips.
