Fluffy Magic Muffins - Vegan Gluten Free Blueberry Muffins

Super soft and fluffy blueberry muffins minus the gluten, egg, and dairy, perfect for those with allergies, dietary restrictions, or lean fridge and pantry days. Any time I bake to share these, no one can tell they're gluten free and vegan. They're simply scrumptious and melt in your mouth. Added bonus: no funky ingredients and the whole thing can be whipped up in your blender for less mess which is always a good thing :)

Ingredients:
1 cup of blended oats
1 brown spotty banana
1/4 cup of sugar
2 tablespoons of tahini (the runnier/oilier, the better)
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon apple cider vinegar
2 teaspoons almond extract (or 1 teaspoon vanilla extract)
Pinch of salt
1/3 cup frozen blueberries (plus more for the top)

I love the combination of blueberry and almond here but blueberry and cinnamon or blueberry and lemon are also excellent options!

Makes 4-6 standard sized muffins
