Super soft and fluffy blueberry muffins minus the gluten, egg, and dairy, perfect for those with allergies, dietary restrictions, or lean fridge and pantry days. Any time I bake to share these, no one can tell they're gluten free and vegan. They're simply scrumptious and melt in your mouth.
