Soft Sandwich Cake


Ingredients for Whipped Cream:
NESTL MILKPAK Dairy Whipping Cream 1 pack

Ingredients for Yolk Mixture:
Egg yolks 4
Caster sugar 45 g
Oil 50 g
Milk 50 g
Vanilla essence 1 tsp
All-purpose flour 90 g
Baking powder 1/2 tsp

Ingredients for Egg White Mixture:
Egg whites 4
Caster sugar 1/2 cup + 1/2 cup
Vinegar 1 tsp

Ingredients for Soft Sandwich Cake:
Egg yolk mixture
Egg white mixture
Whipped cream as required

Directions for Whipped Cream Preparation:
1. In a bowl add NESTL MILKPAK Dairy Whipping Cream and beat until fluffy and stiff peaks form.
Note: Chill the cream overnight in the fridge and whip it with an electric beater.
Note: Do not put in freezer to chill, cream wont whip once it gets gold temperature shock.
Directions for Egg White Mixture Preparation:
2. In a bowl add egg yolks and mix them well. Now add caster sugar and whisk it again.
3. Add oil, milk, vanilla essence and whisk it well.
4. Add flour, baking powder in a sieve and sieve it to the batter. Mix it well with the whisk. Set aside.
Directions for Egg Whites Mixture Preparation:
5. In a bowl add egg whites beat them well until foamy. Now add 1/2 cup of caster sugar, vinegar and beat it again.
6. Add 1/2 cup of caster sugar and beat it again. Set aside.
Directions for Soft Cake Sandwich Preparation:
7. In the egg yolk mixture add half of egg white mixture and with the help of spatula fold this mixture clockwise only while making a cut between the batter after every clockwise turn.
8. Now add the remaining egg white mixture and repeat the process until fully mixed.
9. Now transfer the batter to a cake mold. And bake it at 160 degrees in a preheated oven for 10-12 mins.
10. Now take it out of the oven and let it cool at room temperature.
11. Spread a layer of whipped cream on the cake. Place another cake on top and cut the prepared cake into sandwich shape.
12. Your Soft Sandwich Cake is ready.
