If your water is too hot, it will kill the yeast.Mix with a mixer or by hand. If mixing by hand, the dough is ready when it sticks to itself and becomes smooth and supple {or about 15 minutes later}. You may use 2-3 tb of extra flour if it's too sticky but no more.Set a kitchen towel over the bowl and allow the dough to rest in a dark place undisturbed for 30 minutes.After resting, tear off pieces of the dough and shape into desired forms. Bake on parchment/silpat at 450 for 6-8 minutes.Brush with melted butter and toss in cinnamon sugar.For the icing, whisk the powdered sugar and milk together.
