Makes 4 large loaves (for 40 people)
Greek Easter Tsoureki is an amazing sweet bread that Greek people usually prepare in the Holy week to consume on their celebratory Easter Sunday table and the days after Easter.
In this recipe, I use condensed milk in the dough. That helps Tsoureki become fluffier than using only sugar.
When preparing this amazing Easter delicacy, you shouldnt omit using the special, aromatic spices: Mahlep, Mastiha and Cardamom together with: Vanilla, Orange juice & zest.
All these combined make a huge difference in the flavor and scent of Tsoureki, making it stand apart from other sweet breads or brioche!
Suitable for lacto-ovo vegetarians.

INGREDIENTS:
Ingredients for the Tsoureki dough:
1100 gr. / 2.4 lb / 8.8 cups Bread Flour (or suitable for brioche)
200 gr / 7 oz Condensed (Sweetened) Milk
22 gr. / 0.8 oz / 4 tbsp. dry Yeast
300 ml / 1.2 cups Water lukewarm
250 gr. / 8.8 oz / 1.1 cups Sugar
1 tbsp. / 4 gr / 0.14 oz ground Mahlep (Mahlab) (not more!)
3/4 tsp. ground Mastiha (not more!)
1 tsp. ground Cardamom (not more!)
1/3 cup / 90 ml Fresh Orange Juice
Zest of 1 large Orange
4 medium Eggs @ room temp. (NOT bigger than 50 gr/ 1.75 oz each)
2 tbsp. Vanilla extract
250 gr. / 8.8 oz melted Butter (good quality)
Ingredients for Decoration and Glazing:
2 Egg Whites
About 50 gr. / 1.75 oz Almond slivers
Optional: 150 gr. / 5.3 oz Chocolate Praline (Nutella type, for filling 1 Tsoureki loaf)
