Flourless Pistachio Cookies | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

This simple 4 ingredient cookies have the fabulous flavour of pistachios and absolutely no flour!

FLOURLESS PISTACHIO COOKIES

Ingredients

½ cup pistachio powder
½ cup powdered sugar
½ cup desiccated coconut
1 egg white

Method

1. Take powdered sugar in a bowl. Add desiccated coconut, pistachio powder and egg white and mix till well combined. Refrigerate for 2-3 hours.
2. Preheat oven to 180º C. Line a baking tray with a parchment paper.
3. Divide the cookie mixture into equal portions, shape into balls and lightly flatten. Transfer on the lined tray.
4. Put the tray into the preheated oven and bake for 25-30 minutes. Remove from oven and cool.
5. Serve or store in an air-tight jar.
