Flourless Chocolate Cookies Recipe

Light and delicate cookies with a chewy center and crisp edges. These are super easy to make, no fuss, and gluten free!

Ingredients:
2 c powdered sugar
c unsweetened cocoa powder
ts fine salt
ts cinnamon
ts espresso powder
2 egg whites
1 ts vanilla
Sprinkle of coarse salt/chocolate chips {optional}

Instructions:
In the first bowl, sift together the powdered sugar and cocoa.
Whisk in the salt, cinnamon, and coffee.
In the second bowl, whisk the egg whites with the vanilla.
Sprinkle in the entire contents of the first bowl and mix to combine. Fold in chocolate chips {if using}
Scoop onto baking sheets lined with parchment/silpat {important as they are very sticky} and allow to chill in the refrigerator for 15-20 minutes.
Sprinkle with salt if desired and bake at 350 for 13-15 minutes.
