Florets Stew

PREP TIME: 10 MINUTES

COOK TIME: 15 MINUTES

SERVES: 4-6



INGREDIENTS

1 head of cauliflower, cut into florets

1 head of broccoli, cut into florets

5 medium tomatoes, chopped.

100g cremini mushroom, halved.

50g oyster mushroom

1 medium red onion, sliced

4 scotch bonnet pepper, chopped.

4 cloves of garlic, chopped.

1 tsp white pepper

1 tsp fennel seeds

1 shrimp seasoning cube

4 tbsp vegetable oil

1 tsp salt



DIRECTION

Heat vegetable oil in a saucepan over medium heat, add fennel seeds, onion, garlic, stir and let sweat for a minute.
Add chopped tomatoes, stir and let simmer for 3 minutes then add scotch bonnet pepper and stir.
Add white pepper, salt, shrimp seasoning, stir and let it simmer for 2mins
Add the mushrooms, let simmer for minute then add the cauliflower, broccoli florets and stir for 2minutes.
Add bay leaves and let simmer for a minute.
Florets stew ready to serve.
