PREP TIME: 10 MINUTESCOOK TIME: 15 MINUTESSERVES: 4-6 INGREDIENTS1 head of cauliflower, cut into florets1 head of broccoli, cut into florets5 medium tomatoes, chopped.100g cremini mushroom, halved.50g oyster mushroom1 medium red onion, sliced4 scotch bonnet pepper, chopped.4 cloves of garlic, chopped.1 tsp white pepper1 tsp fennel seeds1 shrimp seasoning cube4 tbsp vegetable oil1 tsp salt DIRECTION Heat vegetable oil in a saucepan over medium heat, add fennel seeds, onion, garlic, stir and let sweat for a minute. Add chopped tomatoes, stir and let simmer for 3 minutes then add scotch bonnet pepper and stir. Add white pepper, salt, shrimp seasoning, stir and let it simmer for 2mins Add the mushrooms, let simmer for minute then add the cauliflower, broccoli florets and stir for 2minutes. Add bay leaves and let simmer for a minute. Florets stew ready to serve.
