Flavoured Butter

Garlic and Fresh Herb butter

Add a peppy, flavourful touch to your butter, and it becomes more than just butter! This Garlic and Fresh Herb Butter is ideal to use in pastas, noodles, rice preparations and so on. Or, simply spread it on a slice of toasted bread to give your breakfast a garlicky, herby touch.

Preparation Time: 10 minutes.
Cooking Time: Nil.
Makes ½ cup.

½ soft cup butter
2 tsp finely chopped garlic (lehsun)
2 tsp finely chopped Parsely
2 tsp finely chopped coriander (dhania)
2 tsp finely chopped basil

1. Combine all the ingredients in a deep bowl and mix well.
2. Transfer the flavoured butter onto a 300 mm. (12") X 250 mm. (10") butter paper and roll it tightly towards the other end to form a cylindrical roll.
3. Twist both the ends of the roll and refrigerate for at least 30 minutes.
4. Spread a little butter on toasted bread slices and serve immediately or store refrigerated and use as required.

Schezuan and spring onion butter

Transform simple soft butter into a sprightly, tongue-tickling treat! This Schezuan and Spring Onion Butter combines the mellow flavour and lusciousness of butter with the peppy taste of Schezuan sauce and the spicy crunch of spring onions. It is a wonderful addition to pastas, noodles and rice.

Preparation Time: 10 minutes.

Makes ½ cup.

1½ tbsp Schezuan sauce
2 tsp finely chopped garlic (lehsun)
3 tbsp finely chopped spring onion greens
½ cup soft butter

Jalapeno Olive butter

Jalapeno and black olive are both ingredients that have an interestingly sharp flavour. When these are added to pleasant tasting, lusciously soft butter, you get a spread with a fabulous flavour that is spicy in a very balanced sort of way. You can use the Jalapeno Olive Butter to make pastas, noodles and rice, or you can use it as an interesting spread for your toast, sandwiches or rolls.

2 tbsp finely chopped black olive
1 tbsp oil
½ cup soft butter
