A flaky puff pastry, packed with fresh juicy plums, drizzled with Apricot jam and Pistachio powder, immediately melt in the mouth and are super easy to make!

FLAKY PLUM PASTRY

Ingredients

4 plums
4-5 puff pastry squares
¼ cup sugar
1 tsp lemon juice
A pinch of cinnamon powder
3-4 cake slices
Milk for brushing
Apricot jam for brushing
Pistachio powder to sprinkle

Method

1. Deseed the plums. Chop 2 and slice the remaining.
2. Heat a nonstick pan. Add the chopped plums, sugar and ¼ cup water and cook for 6-8 minutes or till the mixture thickens.
3. Add lemon juice, cinnamon powder and mix well. Transfer in a bowl and allow to cool.
4. Preheat the oven at 180º.
5. Crumble the cake slices directly in the bowl.
6. Roll the puff pastry sheets slightly and place a portion of the stuffing in the centre. Arrange the plum slices on top.
7. Brush milk on the edges, fold the edges slightly so that it looks like open pocket.
8. Arrange on a greased baking tray and brush some milk over the pockets. Bake for 10-15 minutes.
9. Brush apricot jam on top and sprinkle pistachio powder on top.
