This masaledar fried fish head curry is infused with flavor and a blend of spices, tastes amazing when served piping-hot with some rice

FISH HEAD CURRY

Ingredients

4 rohu fish head
4 tbsps mustard oil
1 tsp turmeric powder
1-2 green chillies, slit
2 bay leaves
1 medium onion, finely chopped
1 tbsp cumin paste
1 tbsp ginger paste
½ tbsp garlic paste
½ tsp turmeric powder
½ tbsp red chilli powder
½ cup ambe moher rice, soaked
1 tsp garam masala powder

Method

1. Heat 3 tbsps oil in non-stick kadai, meanwhile, take fish heads in a bowl and add salt and ½ tsp turmeric powder, mix well.
2. Add the fish heads in the hot oil and shallow fry till golden brown and crisp. Drain on an absorbent paper.
3. Carefully transfer the oil in a pressure cooker and add remaining oil.
4. Add green chillies, bay leaves, onion and sauté till they turn light golden brown.
5. Add cumin paste and sauté for 1-2 minutes. Add ginger paste, garlic paste and mix well.
6. Add remaining turmeric powder, red chilli powder and mix well.
7. Reduce the heat and add rice and mix well. Add fish heads and mix till well combined.
8. Add 1½ cups water and garam masala powder. Mix and cover the pressure cooker and cook for 5-10 minutes or till 2 whistles are released. Allow the pressure to be released completely.
9. Transfer into a serving bowl and serve hot.
