YOGURT TART

In this episode, I'd ilke to share with you a very easy and so yummy tart recipe. I use yogurt and dried blueberries for the filling. You can use any kind of dried or fresh fruits that your heart desires.

INGREDIENTS:

3 eggs (at room temperature)
1 and 1/2 cups flour
4 tbsp butter (at room temperature)
2 tbsp vegetable oil
Granulated sugar
1 cup plain yogurt (at room temperature)
1 cup dried blueberries
Vanilla, baking powder
A pinch of salt
1 tsp Lemon zest


DIRECTIONS:

Preheat your oven to 175 C (350 F)
For the dough: In a large bowl, combine the butter, vegetable oil, 1/3 cup sugar and 1 egg.
Whisk, then beat well.
Sift 1 tsp baking powder and mix into the same bowl.
Then sift 1 and 1/2 cups of flour and mix with a spatula.
Gently knead for 1-2 minutes.
The dough should be soft and slightly sticky.
Use your hands to press the dough evenly into the bottom and sides of the pan.
I am using a 23 cm. (9.5 inch) removable-bottom tart pan.
A piece of plastic wrap works well to stretch evenly.
Refrigerate until needed.

For the filling: Pour 2 eggs into a bowl.
We try not to eat too much sugar, so I just add 1/2 cup, add 1 cup of sugar if desired.
Add a pinch of salt, vanilla, lemon zest, 1 tbsp flour and whisk.
Stir in the yogurt and whisk well.
Last but not least, pour blueberries (or any other fruit that your heart desires) and mix.
Pour the filling over the tart dough, spread, then shake and tap the pan on the counter a couple of times to get rid of any bubbles.
Bake in prehated oven for 30-35 minutes.
Then remove from the oven and let cool completely on a wire rack before putting it into the fridge.
After leaving the tart in the fridge for at least 8 hours... which I find the most difficult!
