FELLAH KFTE: BULGUR AND GROUND BEEF MEATBALLS WITH PEPPER & YOGURT DRESSING

FULL RECIPE FOR FELLAH KFTE
Ingredients
For the bulgur meatballs:
2 cups fine bulgur
2 cups hot water
1 onion
2 tbsp pepper paste
1 tbsp salt
1/2 tbsp ground black pepper
1/2 tbsp ground dry coriander
3 garlic cloves
1 egg
400 g ground beef
2 tbsp flour

For cooking:
2 tbsp tomato paste
4 cups (1L) hot water
2 tbsp olive oil
1 tsp salt

For the Pepper Dressing :
1 tsp red pepper flakes
50 g butter
3 tbsp pepper paste
tsp salt
1 cup hot water

For the Yogurt Dressing:
2 cups yogurt
4-5 garlic cloves
1 tsp salt

Directions
BULGUR MEATBALLS
In a large bowl, place 2 cups of fine bulgur
Pour 2 cups of hot water over the bulgur
Seal the bowl and rest the mixture for 15 to 20 minutes to make the bulgur softer
Then, grate an onion into the bowl.
Add 2 tbsp of pepper paste, 1 tbsp of salt, tbsp. of dry coriander, tbsp. of ground black pepper, 1 egg, 400 g of ground beef, 3 minced garlic cloves, and 2 tbsp of flour
Knead the ingredients for 5 to 8 minutes, or until achieving a dough-like consistency
Then, smooth the surface to keep the mixture moist
Shape the mixture into 4-5 cm balls.
For a traditional appearance, press the middle of the balls to make a shallow imprint!!
Nestle the Bulgur Meatballs into a large and shallow pot in an orderly fashion

COOKING
Dissolve 2 tbsp of tomato paste in 4 cups of hot water, thoroughly
Pour the mixture over the Bulgur Meatballs, add 2 tbsp of olive oil, and 1 tsp of salt; Cover the pot with a lid.
Set the stove to medium heat.
Once the liquid starts to boil, simmer the Bulgur Meatballs for 18 to 20 minutes, or until the Bulgur Meatballs have softened.

THE PEPPER DRESSING
Meanwhile, prepare the Pepper Dressing:
In a saucepan, combine 50 g of butter, 1 tsp of red pepper flakes, and 3 tbsp of pepper paste and stir the mixture for 1 minute
Then, add 1 cup of hot water and tsp of salt Reduce the dressing for 3 to 4 minutes and keep it warm

THE YOGURT DRESSING
Combine 2 cups of yogurt, 3-minced garlic, and 1 tsp of salt in a bowl, whisk together and set aside

SERVING
Set a stage for the bulgur meatballs with a couple tbsp of the Yogurt Dressing on the serving plate
Snuggle the bulgur meatballs into the Yogurt Dressing
Drizzle generous spoons of sizzling Pepper Dressing over the entire dish
