Jax helps us forget forks and try these poppable pancakes.Ingredients2 cups all-purpose flour2 Tbsp sugar1 tsp baking powder½ tsp baking soda½ tsp salt2 cups buttermilk2 large eggs3 Tbsp unsalted butter, meltedToppings:BlueberriesRaspberriesCooked baconPowdered sugarMaple syrup for dippingSteps1.) Preheat oven to 400ºF.2.) In a mixing bowl, whisk flour, sugar, baking powder, baking soda and salt.3.) In a separate large bowl, whisk together the buttermilk, eggs and melted butter. Pour the wet mixture into dry mixture. Mix until slightly lumpy. Allow batter to rest for two minutes.4.) Prepare mini-muffin tins with nonstick cooking spray. Fill each cup about ⅔ full. Add toppings in rows: a row of blueberries, a row of raspberries, a row of bacon. Bake 10-12 minutes.5.) Let cool, then serve with maple syrup for dipping.
