Get it really hot. Alternatively, you can use an oven grill on the grill function or even a skillet. It just has to be really hot. Brush your bread slices with olive oil on both sides. Place on the grill plate and grill for 1-2 minutes on both sides. You want that high heat so that you get that lightly charged look on the outside while the inside stays nice and soft. Cut a clove of garlic in half and brush the bread on both sides. Set aside to cool.Sprinkle your bread slices with about 1 tsp of chopped red onion, a couple capers, then layer smoked salmon on top like little frilly waves. Top with a generous sprinkle of chopped red onion and more capers. Finish with a drizzle of olive oil before serving.
