The coating of arrowroat adds a unique dimension to this otherwise common dish. Served with sweetened curds, to complete the mast experience!Preparation Time: 15 minutes. Cooking Time: 10 minutes. Makes 4 plates (8 pattice)To be mixed together into a stuffing5 tbsp freshly grated coconut3 tbsp roasted and coarsely powdered peanuts3 tbsp finely chopped coriander (dhania)1½ tsp chopped raisins (kismis)1½ tsp chopped cashewnuts (kaju)1 tbsp ginger-green chilli paste1½ tbsp sugar1 tbsp lemon juiceSalt to tasteTo be mixed together into a potato mixture1¾ cups boiled, peeled and mashed potatoes3 tbsp arrowroot flour Salt to tasteTo be mixed together into sweetened curds1 cup fresh whisked curds (dahi)3 tbsp powdered sugarA pinch of saltOther ingredientsArrowroot flour for rollingOil for deep-fryingFor servingTeekha chutneySweetened curds (dahi), recipe above1. Divide the potato mixture and the stuffing into 8 equal portions and keep aside.2. Flatten a portion of the potato mixture into a 75 mm. (3") diameter circle and place a portion of the stuffing in the centre.3. Bring together the edges in the centre to seal the stuffing and shape it into a round. Keep aside.4. Roll the pattice in the arrowroot flour till it is evenly coated from all the sides.5. Repeat steps 2 to 4 to make 7 more pattice.6. Heat the oil in a kadhai and deep-fry the a few pattice on a medium flame till they turn brown in colour from all the sides. Drain on absorbent paper.How to proceed1. Place 2 farali pattice on a plate and serve immediately with teekha chutney and sweetened curds.2. Repeat with the remaining ingredients to make 3 more plates.
