Farali Pattice

Who says a person cannot feast when fasting! faral means "fast" and these pattice are designed specifically for those who are fasting. The coating of arrowroat adds a unique dimension to this otherwise common dish. Served with sweetened curds, to complete the mast experience!

Preparation Time: 15 minutes. Cooking Time: 10 minutes. Makes 4 plates (8 pattice)

To be mixed together into a stuffing
5 tbsp freshly grated coconut
3 tbsp roasted and coarsely powdered peanuts
3 tbsp finely chopped coriander (dhania)
1½ tsp chopped raisins (kismis)
1½ tsp chopped cashewnuts (kaju)
1 tbsp ginger-green chilli paste
1½ tbsp sugar
1 tbsp lemon juice
Salt to taste

To be mixed together into a potato mixture
1¾ cups boiled, peeled and mashed potatoes
3 tbsp arrowroot flour
Salt to taste

To be mixed together into sweetened curds
1 cup fresh whisked curds (dahi)
3 tbsp powdered sugar
A pinch of salt

Other ingredients
Arrowroot flour for rolling
Oil for deep-frying

For serving
Teekha chutney
Sweetened curds (dahi), recipe above

1. Divide the potato mixture and the stuffing into 8 equal portions and keep aside.
2. Flatten a portion of the potato mixture into a 75 mm. (3") diameter circle and place a portion of the stuffing in the centre.
3. Bring together the edges in the centre to seal the stuffing and shape it into a round. Keep aside.
4. Roll the pattice in the arrowroot flour till it is evenly coated from all the sides.
5. Repeat steps 2 to 4 to make 7 more pattice.
6. Heat the oil in a kadhai and deep-fry the a few pattice on a medium flame till they turn brown in colour from all the sides. Drain on absorbent paper.



How to proceed
1. Place 2 farali pattice on a plate and serve immediately with teekha chutney and sweetened curds.
2. Repeat with the remaining ingredients to make 3 more plates.
