When ready to prepare, scoop ~ cup of bulk instant oatmeal mixture into a bowl or saucepan. Add -1 cup water or milk of choice and cook in the microwave or over the stove for 2-3 minutes, until desired consistency is reached. TUNA SALAD:~30 oz canned tuna, drained & rinsed cup diced celery cup red onion, diced2 Tbsp parsley, chopped2 Tbsp fresh dill -1 cup yogurt or mayo2 Tbsp whole grain mustard1 lemon, juiceddash of black pepperAdd all ingredients to a large bowl. Mix well to combine. Serve on its own, on a bed of greens, or stuffed into a pita pocket! CHICKEN APPLE SAUSAGE & SQUASH BOWLS:4 cups butternut squash cubessalt & pepper2 cups blueberries cup almond slivers 4 chicken apple sausage links, chopped4 cups cauliflower rice, cookedPreheat oven to 425F. On a baking sheet lined with parchment, toss butternut squash cubes with oil and seasonings. Roast 20-25 minutes. Remove from oven and allow to cool to the touch. Once cool, combine roasted squash with fresh blueberries, slivered almonds, and chopped chicken apple sausage. Mix to combine. Serve over cauliflower rice and enjoy! TURKEY BURGERS:2 lbs ground turkey2 Tbsp Worcestershire3 Tbsp parsley1 tsp salt tsp pepperIn a large bowl, combine all ingredients and mix together with hands. Form into patties ~-inch thick. Indent the center of the patty slightly with your thumb. Heat a grill or skillet over medium heat, spray with oil, and add patties in batches. Cook until golden and cooked through, 5 minutes per side. Serve with your favorite toppings! SWEET POTATO FRIES:https://www.youtube.com/watch?v=bDqaAd_2a2Y MEXICAN CASSEROLE:drizzle of oil1 cup onion1 green bell pepper1 lb lean ground beef2 tsp chili powder2 cup salsa1 can tomatoes1 can black beans1 can corn 2 oz olives, sliced cup green onion1 cup shredded cheddar6-8 medium tortillas of choiceIn a skillet, cook onion and bell pepper, until softened. Add beef and cook through completely. Add chili powder, salsa, and tomatoes. Stir and remove from heat. Set aside. Mix together drained & rinsed black beans, corn, olives, and green onion. In a 9x13-inch glass baking dish, place 2 whole-wheat or corn tortillas in the bottom. Add of the beef mixture, followed by of the bean mixture and cup cheese. Top with two more tortillas and repeat the layers again, finishing with cheese on top. Store in the fridge for up to 1 day before baking, or bake immediately. Bake at 400F (200C) for 20 minutes.
